Who Has Time for Lunch?

Teacher lunch ideas- quick, cheap, healthy

We can't possibly be the only teachers in America who laugh when people mention eating lunch during the week. Maybe it's more envy than laughter. Who knows. What I do know is that it's a joke among teachers that we can eat full meals while walking around the cafeteria opening Ketchup packets, telling kids to use their manners, and we don't even get sick when we see milk come out of someone's nose. Now, that's talent!

We make wishes about eating with other adults or having a moment of peace during the day, but the honest truth there isn't anywhere we'd rather be. Lunch is a time to get to know our kids. We get to have conversations with them, find out about the latest craze to hit elementary school, and die laughing at some of their antics.

But, where does this leave teachers at the end of the day? STARVING! Running to the vending machine and scarfing down anything that comes out of that machine like a Hoover Vacuum. That's not good, my friends. Not good at all.

Laura and I have gotten this whole "lunch" thing down. We rarely bring something to heat up. We are big on chicken salad, crackers, raw veggies, and egg salad.

Here's our favorite chicken salad recipe:

We leave out the mayo. It's healthier that way and just as good! :)

I also love to bring pretzels with peanut butter to dip. I normally eat that during planning. It's a good pick-me-up and can be eaten easily while working.

Do you have any favorite lunches?

Teaching is Hard

Teaching is hard. I'll bet this isn't a newsflash to any of you reading this blog... because most of you are probably teachers. "You get summers off!" people like to say. Yep. I sure do. And with my "summers off" I plan for next year, learn about things to try with my students, attend professional development sessions, attend meetings (yes, you read that right), and do things around my house that I didn't have time to do during the school year.  And you know what? I wouldn't trade it for anything in this world. Teaching is hard. I spend all day with children who belong to other people. I get to know them and I learn to love them. I watch them grow into these amazing little children... and then I say goodbye and send them off. It's hard. There are days when I don't want to send them home because their home lives are not desirable. There are days I don't want to send them home because I wonder if they'll get anything to eat for d...
